Here are the ingredients for the shrimp scampi pasta:
1 pound bow tie pasta
1.5 pounds raw shelled and deveined shrimp
8 large cloves of finely chopped garlic
1/2 pound of fresh green beans that have been blanched and cut into pieces
3 tablespoons of fresh parsley and basil
Juice from one lemon
Shrimp stock
1/2 inch of butter
2 tablespoons of olive oil
One tablespoon of flour
Parmesan cheese
Cook the pasta with some salt in boiling water. Drain, and set aside. In the mean time, shell the shrimps. Save the shells to make the stock. When you boil the shells to make the stock, make sure that you do not boil it for more than 10 minutes. Strain the stock and keep aside.
In a large pan, add butter and olive oil. Once the butter melts, add the garlic. Turn the flame low and cook the garlic. Make sure that the garlic does not turn brown. Instead, it should turn translucent. Then add the green beans. Cook for around 2 minutes. Add the shrimps. Keep stirring. Cook the shrimps till they are 1/3 cooked. Then sprinkle the flour and cook for another minute. Add the shrimp stock, and keep stirring constantly. Once the shrimps are cooked, add the lemon juice, basil and parsley. Add the pasta to this mixture, and then add the cheese and black pepper. Stir well. Cover the pan and let it cook until the liquid is absorbed by the pasta.
Add some olive oil, and then transfer to a serving dish. Your shrimp scampi pasta is ready to be enjoyed by you and your family.
