Pig Roasting Techniques

The pork that we get these days are more lean than the ones before reducing the amount of fat in them and making it more healthy for people of all ages. It has also changed the way the pork is cooked as the reduced amount of fat requires less moistening and gives less of the flavor due to which you might not want to overcook it.

Even as it is proved that the parasites within them can be killed at 137 degree Fahrenheit, it is highly recommendable to cook it to around 155-160 degree Fahrenheit just to be safe. There are two ways of cooking delicious pork meat – Dry heat for the cuts that are very tender and moist heat for the cuts that are not so tender.

Roasting is the dry heat way of cooking meat. If you want to roast the whole pig, there are quite different ways of doing it like roasting it above the ground, underground and so on. Here is how you roast it underground.

You would need to hollow out a pit about the depth of 3 feet and width of 30 inches. Now put some logs of wood that would make up to twelve inches of hot coals. After the pig is gutted and cleaned, then rub it with minced garlic, black pepper, cayenne pepper, dried oregano and dried thyme. Now, wrap it in banana leaves, and secure it tightly inside with the help of strings and put it on a wire rack to put it into the pit when sufficient amount of coal has built up. Cover the pit completely with banana leaves and dirt of about 6 to 7 inches high and add coal on it. Roast it for eight to ten hours before enjoying it with your favorite sauce.
