Best Recipe For Roasting Potatoes

Potatoes are rich in protein, fiber content as well as vitamin C than many other vegetables, and are more nutritious if cooked along with their skins. Ensure that the potatoes are properly washed before cooking.

To prepare mouth-watering roasted potatoes, you need raw potatoes (about 1/2 pound for every person), fat (of your choice), pepper and salt to taste.

Quarter each potato and place each piece in the sauce pan containing cold water. Keep the stove on high heat and bring the water to boil. Add salt to taste and boil the water for about 10 minutes.

Once the potatoes start boiling, preheat the oven to a temperature of 425 degrees F. On a roasting tin, place 2 oz of fat for every pound of potato. Lard, duck fat or peanut oil fat are some of the best choices for this purpose. Heat this up by placing in the oven.

When the potatoes are cooked, drain them and place them on the cutting board. Using a fork, scrape the tines and rough up the outside. Remove the roasting tin containing the hot fat from the oven and place the potatoes on the tin. Sprinkle salt and pepper to taste. Shake the potato pieces well until they are covered uniformly with the fat.

You can place the potato pieces smeared with the delicious fat and cook it further in the oven for about 45 minutes. The potatoes would turn crispy and the skin would turn brown. This is a great side dish, or an appetizer, to enjoy.

It is also a very good accompaniment while you are serving roast turkey or beef.
